Chicken With Peppers And Cashew Nuts
Yield: 4 servings
Ingredients and directions for this recipe
3 tb Groundnut oil
425 g Chicken breast; sliced in
-thin
; strips (14oz)
2 Cloves garlic; crushed
200 g Frozen mixed peppers; (7oz)
1 160 g jar black bean sauce
4 Spring onions; cut on the
-diagonal
75 g Cashew nuts; (3oz)
Heat the oil in a large pan or wok.
Add the chicken and garlic and stir-fry for 2-3 minutes.
Add the peppers and cook for a further 2 minutes.
Add the black bean sauce, spring onions and cashew nuts and cook for
2-3 minutes until warmed through.
Serve immediately with rice or noodles.
