Chickpea Puree

Yield: 4 Servings

Ingredients and directions for this recipe

3 Cloves garlic; chunked
1/4 c Slice green onions
1/4 c (packed) fresh parsley
-leaves
3 Grinds fresh black pepper;
-more or less
1 ds Cayenne pepper
1 ds Ground cumin
1 ds Turmeric
1 Lemon; juice of
1 ds Tamari or soy sauce
1 cn (16-oz) chickpeas; rinsed
-and drained

Combine the garlic, onions, and parsley in the food processor and process
til smooth. Add the rest of the ingredients and process til desired
consistency is reached - just a little for a chunky puree, quite awhile for
a creamy puree. A little water may be necessary to correct consistency.
Serve as a dip or spread for veggies or baked tortilla/pita chips.
