Chickpea Salad Sandwich
Yield: 3 servings
Ingredients and directions for this recipe
3 Pita bread pockets or
6 sl Whole wheat bread
FILLING
1 c Cooked chickpeas OR canned;
-drained and mashed
1/2 c Celery; diced
1/4 c Onion; diced
1/4 c Fat-free mayonnaise or
-lowfat yogurt; or
-combination
1 ds Pepper
Combine filling ingredients and blend well. Serve in pita pocket or on
whole wheat bread.
Yield: 3 sandwiches
