Chocolate Cherry Thumbprints
Yield: 1 Servings
Ingredients and directions for this recipe
3/4 c Sugar
2/3 c Margarine (1 stk + 3 tb.)
2 lg Eggs
1 ts Vanilla
12 oz Pkg. choc. chips (2 c.),
Divided
2 c Oats (quick or old fash.)
1 1/2 c All purpose flour
1 ts Baking powder
1/4 ts Salt, optional
2 c Maraschino cherries, 2 10-oz
Jars); drain patted dry
Heat oven to 350 deg. Beat margarine, sugar, eggs and vanilla until
smooth. Add 1 Cup of morsels, melted. Mix well. Stir in oats, flour,
baking powder and salt, mix well. Cover dough and chill 1 hour. Shape
dough into 1 inch balls. Place on ungreased cookie sheet, press deep
centers with thumb. (I use lg wooden spoon handle). Place a
maraschino cherry into hole. Bake 10 to 12 minutes, or until set.
Remove to wire rack, cool completely. Drizzle cookies with remaining
1 cup of melted morsels.
Note: To melt 1 cup of morsels, Microwave on High 1 to 2 minutes,
stirring every 30 seconds.
