Cocktail Party Meatballs

1/4 c Fat-free cottage cheese
2 Egg whites
2 ts Worcestershire sauce
1/2 c Plus 2 tablespoons dry plain
-bread crumbs
8 oz Ground turkey breast; (see

6 oz Turkey sausage; removed from
-casings if necessary
2 tb Minced onions
2 tb Minced green peppers
1/2 c Snipped fresh parsley
1/4 c Minced celery leaves
Meatballs are an all-time favorite at any party. Also, they can be prepared
ahead, giving you more time with your guests. Just shape the meat mixture
into balls and refrigerate them until the party. Then roll the balls in the
coating mixture and broil. Calories, fat and cholesterol were reduced by:
* Replacing the ground beef with a combination of ground turkey breast,
ground turkey sausage and
fat-free cottage cheese * Using egg whites instead of a whole egg

Spray a cookie sheet with no-stick spray and set aside. In a large bowl,
stir together the cottage cheese, egg whites, Worcestershire sauce and 1/2
cup of the bread crumbs. Stir in the turkey breast, turkey sausage, onions
and green peppers. Shape the poultry mixture into 32 meatballs. On a sheet
of wax paper, combine the parsley, celery leaves and remaining 2
tablespoons bread crumbs. Roll the meatballs in the parsley mixture until
coated evenly. Preheat the broiler. Transfer the meatballs to the prepared
cookie sheet. Broil 3 to 4 inches from the heat for 10 to 12 minutes or
until browned on all sides and no longer pink in the center, turning
occasionally. Serve with cocktail toothpicks.
Makes 32 meatballs, 32 servings.
Note: To make sure you're buying the leanest ground turkey available, check
the label. Look for products made with only turkey breast meat. Many ground
turkey products contain the dark meat and the fatty skin.
