Cocoa Applesauce Muffins
Yield: 1 servings
Ingredients and directions for this recipe
1/4 c All purpose flour 1 t Vanilla extract
1/2 c Oat bran 1 ea Heat oven to 375F. Line a
1/3 c Sugar -12 count muffin tin with
1/4 c Unsweetened cocoa -paper baking cups.
-powder 2 ea In a large bowl, combine
2 t Baking powder -the flour, oat bran,
1/2 ts Baking soda -sugar, cocoa, baking
1/4 ts Salt Powder, baking soda, and
1 c Buttermilk -salt.
1/4 c Safflower oil 3 ea In a medium bowl, place the
1/2 c Unsweetened applesauce -buttermilk, oil,
1 ea Whole egg -applesauce, whole egg, egg
2 ea Egg whites
whites and vanilla. Whisk until well blended. Add all at once to the
dry ingredients. Stir only until moistened;the batter should be
slightly lumpy. 4. Spoon the batter evenly into the prepared pan.
Bake 20-25 minutes or until the muffins are golden and springy to the
touch. Remove the muffins and cool on a wire rack. From "Great
