Coconut Sorbet

Yield: 1 servings

Ingredients and directions for this recipe

20 oz Coconut milk
4 oz Finely shredded coconut
1/2 c Sugar

Combine the ingredients in a heavy saucepan and place over medium
heat. Bring to a simmer and cook until coconut is soft and tender,
about 30 minutes. Cool the mixture to room temperature, cover and
chill in the refrigerator until cold. Place the mixture in an ice
cream or sorbet maker and freeze as directed. (You can freeze the
mixture in a bowl or container directly in the freezer. When
completely frozen, scrape the mixture to form servings...the flavor
will be the same, but the consistency will be different!) Makes about
3 cups of sorbet.
