Crevette Au Pernod

Yield: 1 servings

Ingredients and directions for this recipe

2 tb Vegetable oil
1 sm Onion; chopped
2 Garlic cloves; chopped
4 oz Sliced mushrooms; up to 6
1 bn Green onions; chopped
2 lg Fresh ripe tomatoes; diced
1/2 ts Thyme
Salt and pepper to taste
1 oz Pernod
24 lg Shrimp

Heat frying pan with the vegetable oil and add chopped onion and
thyme. Cook 1 to 2 minutes. Add the sliced mushrooms and chopped
garlic together with the tomatoes. Cook for 2 to 3 minutes. Add
shrimp and mix thoroughly. Cook 1 minute and add salt and pepper.

Blend the Pernod into the mixture. Do not cook the shrimp for more
than 3 to 4 minutes total, or they will get rubbery. Serve over rice
or pasta, and bon appetit!

Note: Try dipping bread in the sauce. You'll love it!
