Diabetic Mock-turtles

Yield: 18 servings

Ingredients and directions for this recipe

18 ea Pecan halves 1 tb Granulated sugar replacement
1/2 c Cold water 1/2 ts Maple flavoring
1 pk Unflavored gelatin 1 oz Diabetic chocolate coating
1/2 c Skim milk

place 1 pecan half in paper cupcake holder,inside muffin tin.Dissolve
gelatin in water for 5 minutes.Cook and stir over medium heat till it
comes to a full boil.Boil 2 minutes.Remove from heat,stir in all but
the chocolate.blend well.set aside until thick,syrup
consistency.spoon 2 tsp.over each pecan half.chill till firm.melt
chocolate in double-boiler and divide evenly in each cup.store in
refrigerator. yield:18 turtles exchange:1 turtle = 1/5 bread
calories:1 turtle = 16 calories
