Fabulous Holiday Fruitcake (low Fat)

1/2 c Dried papaya -- chopped
1 c Dried pineapple -- chopped
1/2 c Dried apricots -- chopped
1/2 c Dried figs -- chopped
1/2 c Raisins (dark or light)
1 c Chopped walnuts
2 lg Eggs
2 ts Vanilla extract
1 c Barley flour, found in --

1 tb Baking powder
1 ts Ground allspice
1 ts Ground cinnamon
1 ts Grated nutmeg
1/2 ts Ground cloves

1. Pour strawberry juice into a large bowl. Add the dried fruit and mix
well. Let it stand for at least 1 hour, or until most of the liquid is
absorbed. 2. Add the walnuts, eggs, and vanilla extract to the fruit
mixture and beat well. 3. Sift together the flour, baking powder and
spices. Add the flour mixture to the fruit mixture and beat lightly with a
wooden spoon. 4. Turn the batter into two 8-1/2 x 4-1/2 x 2-1/2 inch loaf
pans thich have been sprayed with a bakers coating of grease and flour. 5.
Bake at 350 degrees for 45 minutes or until a toothpick inserted in the
center of the loaf comes out clean. Let cool for 10 minutes in the pan and
then place on racks to finish cooling. Yield: 2 Loaves (24 servings) 1

sugar.
