Farmer's Market Cobbler
Yield: 8 servings
Ingredients and directions for this recipe
1/2 c Butter
3/4 c Flour; all-purpose
1 ts Baking powder (heaping)
1 1/2 c Sugar
1/2 ts Salt
2/3 c Milk
1 qt Fruit (blueberries, peaches,
. apricots, blackberries,
. pears or apples); fresh
. or frozen
Melt the butter in a 2-quart baking dish. Combine the dry
ingredients, reserving 1/2 cup sugar. Stir into melted butter in the
baking dish. Add the milk and stir again.
Bring the fruit and 1/2 cup of sugar to a boil. As soon as it boils,
remove from the heat and pour over the batter. Don't stir.
Bake at 400?F for 30 minutes.
