Garlicky Broiled Chicken

1/2 c Lemon Juice
2 tb Olive Oil
1/2 c Dry White Wine
6 cl Garlic
2 Bay Leaves
2 Chicken Breasts
2 lg Red Peppers
3/4 lb Mushrooms
Broiled Chicken Breasts are sometimes boringly bland, but not these!
The garlicky marinade will really wake up your tastebuds.

Preparation:
Mince or Press the Garlic Cloves Skin, Bone and Split the chicken
breasts (1lb meat total) Seed the peppers and cut into 1.5" squares
Crumlbe the bay leaves Half the mushrooms
In a shallow bowl stir together lemon juice, oil, wine, garlic and bay
leaves. Rinse and drain chicken; add to marinade and turn to coat.
Cover and refrigerate for at least 2 hours or up to one day, turning
chicken occasionally.
Lift chicken from marinade; reserve marinade. Place chicken on a rack
in a broiler pan. Broil 4 inches below heat for 15 minutes, basting
with marinade and turning as needed to cook evenly.
Arrange peppers and mushrooms alongside chicken, baste lightly and
continue to broil until the chicken is no longer pink in the middle.
Cut to test (about 5 more minutes).
