Kabab Masala
Yield: 4 To 6
Ingredients and directions for this recipe
1 1/2 lb Ground lamb or beef
1/4 c *green masala (I add a
-couple more garlic cloves
-and fresh coriander leaves)
1 md Onion
1 tb Plain yogurt
1/2 ts Ground turmeric
1/2 ts Ground cumin
1 tb Lemon juice
1 ts Salt
1 tb Melted butter
(This recipe was modified from a recipe published in Cooking the Indian Way
by Vijay Madavan)
Combine all but butter. Mix well until mixture is fairly stiff. Cover and
let stand 30 minutes. Preheat broiler. Lightly grease 12 skewers with
melted butter. Shape meat mixture into meatballs on skewers. Broil about 5
min (until well browned) Turn and broil another 4 min.
