La Bamba Flautas
Yield: 6 servings
Ingredients and directions for this recipe
2 c Mascarpone cheese; at room Sugared Nuts; recipe follows
-temperature 4 tb Unsalted butter or walnut
1/4 c Heavy (whipping) cream -oil
1 tb Confectioners' sugar Mexican Chocolate Sauce;
1/2 ts Vanilla extract -recipe follows
6 Corn or flour tortillas
1. In a bowl, mix together the cheese, cream, sugar, and vanilla
until smooth. Spread about 1/3 cup of the mixture in the center of
each tortilla. Arrange about 1/4 cup of the Sugared Nuts over the
cheese. Roll up each tortilla flauta style; secure with a toothpick.
2. When ready to serve, melt 2 tablespoons of the butter in a large
frying pan set over medium heat. Add 3 or 4 flautas and fry for 1
minute. Turn and fry on the opposite side until browned and crisp,
about 1 minute more. Remove to a platter. Add the remaining 2
tablespoons butter and continue with another round to cook all of the
flautas.
3. Spoon Mexican Chocolate Sauce over each flauta and eat while
still warm and crunchy.
