La Cuisine Soupe A L'oignon Gratinee (onion)

1/2 c Peanut oil 1 Bottle dry red wine
6 lg Brown onions, coarse chpd 10 c Beef consomme
1 ts Thyme 8 sl Stale French bread
3 Bay leaves 1 1/2 lb Swiss cheese, grated
La Cuisine Restaurant, Windsor, Ontario, Canada Heat oil in lg pot.
Add onions and saute until cooked but not brown. Add thyme and bay
leaves. Stir in wine. Bring to boil and let soup reduce for a few
mins. Add consomme and cook uncovered, 20 mins. Pour soup into 8 lg
ovenproof soup bowls. Top with slice of French bread. Sprinkle with
cheese. Broil quickly until bubbling and golden. Serve at once. S:
