Mexican Kasha^
Yield: 6 servings
Ingredients and directions for this recipe
1 c Chopped onion 1/2 ts Cumin
1/2 c Chopped celery 1 ts Chili powder
1/2 Green pepper, chopped 2 cn (16oz) no salt added
1/2 Red pepper, chopped Tomatoes, coarsley chopped,
2 cl Garlic, minced Save juice
1/4 c Chicken stock 3/4 c Uncooked kasha
1 ts Dried oregano
Soften onion, garlic, celery and peppers in stock. Add remaining
ingredients and bring to a boil. Reduce heat and simmer until liquid
is absorbed and kasha is tender.
