Moist Fruited Teabread
Yield: 12 servings

-FOR THE LOAF-
75 g High fibre bran; (3oz)
175 g Caster sugar; (6oz)
2 tb Honey
50 g Dried apricots; roughly
-chopped
; (2oz)
50 g Dried cherries; (2oz)
5 0 g; (2oz) dried
; blueberries
50 g Dried cranberries; (2oz)
250 ml Soya milk; (8floz)
175 g Self-raising flour; (6oz)
-TO DECORATE-
2 tb Honey
25 g Each of the dried fruits;
-(1oz)
Mix the cereal, sugar, honey and fruit in a bowl. Stir in the milk and
leave to soak for 1 hour.
Preheat the oven to 180 C, 350 F, Gas Mark 4.
Lightly oil a 900g (2lb) loaf tin and line the base with greaseproof paper.
Sift the flour over the bran mixture and fold in. Spoon into the prepared
tin and bake for 1-1 1/2 hours or until firm to the touch.
Remove from the oven and leave to cool in the tin, then turn out onto a
cooling rack and leave to cool completely.
Brush the top with honey and decorate with more fruit.
