Moist Johnny Cake

Yield: 1 Servings

Ingredients and directions for this recipe

1 c Flour
1/2 c Sugar
1 c Corn meal
1 c Milk
1 ts Salt
1 Egg
3 ts Baking powder
3 tb Honey
3 tb Cooking oil

Sift together flour, corn meal, baking powder and salt. Beat egg, add
sugar. Heat milk to lukewarm and add honey to milk. Add the beaten egg and
oil, add dry ingredients, mix until smooth. Bake 400 degrees, 20 minutes or
a little longer. Pour into greased muffin pan (12 medium sized) or bake in
9"x9" pan.
