Mojo Garlic Dressing

Yield: 4 Servings

Ingredients and directions for this recipe

1 Whole lemon; juiced
4 Cloves of garlic; peeled and
-chopped
1/4 c Oil
1 Chopped onion
Black pepper; (optional)

This comes from a cookbook called All About Cuban Cooking.

Place garlic, onion, lemon juice in small bowl (no plastic!). In a frying
pan, bring the oil to a boil. Pour over the ingredients in the bowl and
serve over your favorite vegetables boiled or raw as a dressing. Mojo is
often used as salsa in several dishes. It must be prepared at the last
minute. If prepared ahead, the flavor may change.
