Oatmeal Rolls
Yield: 24 servings

2 1/3 c Water -- diveded 1 1/2 ts Salt
1 c Oatmeal 2 pk Active dry yeast -- 1/4 oz
3 tb Butter or margarine Each
2/3 c Packed brown sugar 5 3/4 c All-purpose flour --
1 tb Sugar Diveded
In a saucepan, bring 2 cups water to a boil. Add oatmeal and butter;
simmer 1 min. Removed to large mixing bowl and let cool. Heat the
remaining water; add yeast. To the oatmeal mixture add brown and
white sugars, salt, yeast mixture and half of the flour. Mix well.
Add enough remaining flour to make a soft dough. Turn out onto a
floured board; knead 6 to 8 min. or until smooth and elastic. Add
additional flour if necessary. Place dough in a greased bowl, turning
once to grease top. Cover and let rise in a warm place until doubled,
about 1 hr. Punch dough down; divie in half and shape each half into
12 balls. Place 1 in. apart on two greased 13x9 inch baking pans.
Cover and let rise until doubled, about 45 to 60 min. Bake at 350
deg. for 20 to 30 min. Yield: 24 rolls.
