Peasant Soup For One

1 Boneless skinless chicken
-breast (4 ounces) cubed
1/4 c Chopped onion
1 sm Potato; cubed
1 sm Carrot; sliced
1 c Chicken broth
1 Clove garlic; minced
1/4 ts Dried tarragon; crushed
1/8 ts Salt; optional
1 ds Pepper
2 ts Chopped fresh parsley

Hi Brenda, I got this out of Taste Of Home. Hope you like it! Pam Cobb
coat a saucepan with nonstick cooking spray; brown chicken over medium-high
heat. Add the next eight ingredients; bring to a boil. Reduce heat. Cover
and simmer for 20-25 minutes or until vegetables are tender. Sprinkle with
