Plantation Green Beans

Yield: 8 Servings

Ingredients and directions for this recipe

80 Fresh long Pole or green
-beans
8 sl Bacon; partially cooked
8 Toothpicks

-SAUCE-
4 tb Bacon grease
3 tb Cider vinegar
2 tb Tarragon vinegar
1 ts Salt
1/2 ts Paprika
1 tb Chopped parsley
1 tb Grated onion

Partially cook beans in salted water until tender. Drain. Secure 10 beans
in a bundle wrapped with bacon and secured with a toothpick. Place on foil
covered cookie sheet and bake at 400 until bacon is done on all sides (10
to 15 minutes). Pour sauce over beans and serve hot. To make sauce, boil
ingredients over medium heat for 5 minutes. Pour 1 to 1-1/2 Tablespoons
over each bundle. Yield: 8 servings.
