Rabbi Lawson's Sephardic Harcoset
Yield: 16 servings
Ingredients and directions for this recipe
5 Apples; 2 c Almonds; coarsely ground
16 oz Pkg pitted dates; 1/4 c Apple cider vinegar;
2 c Pecans -=OR=- 1/2 c Sweet kosher red wine;
Peel, core and slice apples. Cook with dates in water to cover until
the apples are tender, approximately 45 minutes. Water should be
almost evaporated; if not, strain mixture to remove excess water.
Cool the mixture. Blend apples and dates in processor until smooth.
Place mixture in a large bowl. Stir in nuts, vinegar and wine. If
to thick, add more wine or vinegar. Chill and serve.
