Sesame Oven-fried Fish
Yield: 2 servings
Ingredients and directions for this recipe
4 Catfish fillets (1 lb) 1 tb Snipped fresh coriander; or
1/4 c Skim milk -1 ts. dried cilantro; crshd
1/4 c Fine dry bread crumbs 1/4 ts Dry mustard
1/4 c Yellow corn meal 1/2 ts Garlic powder
1 tb Toasted sesame seed 14 ts Pepper
Rinse fish and pat dry with paper towels. Pour milk into shallow
pan. In another shallow pan, combine crumbs, corn meal, sesame seeds,
coriander, mustard, garlic powder and pepper. Dip fish into milk,
then coat with crumb mixture. Spray a 13x9x2 inch pan with non-stick
cooking spray. Arrange fish in pan. Bake at 450 degrees until golden
and fish flakes easily when tested with a fork (allow 4 to 6 minutes
per 1/2 inch thickness).
