Turkey Italian Sausage With Red Sauce

Yield: 4 servings

2 tb Olive oil, divided -wine
1 pk Butterball Turkey Italian 1 cn Tomato sauce (15 oz)
-Sausage (1 lb) 1 cn Stewed tomatoes, drained
1 lg Onion, chopped -(14 1/2 oz)
1/2 lb Mushrooms, sliced 2 tb Tomato paste
1/2 Green bell pepper, chopped 1/2 t Italian seasoning
1 Garlic clove, minced 1 c Cooked Mahatma Rice
1/4 c Chicken broth or dry white

Heat 1 tablespoon of the oil in large skillet over medium heat. Add
turkey sausage and brown 8-10 minutes. Remove from skillet; set
aside. Add the remaining 1 tablespoon oil and onion to skillet; cook
over medium-low heat 5 minutes. Then add mushrooms, pepper and
garlic; cook 5 minutes more. Pour in broth and cook over medium-high
heat about 2 minutes. Stir in tomato sauce, stewed tomatoes, tomato
paste and Italian seasoning. Bring to a boil. Return sausage to
skillet. Cover and simmer over low heat 15 minutes. Serve with hot
Mahatma Rice.
