Vacherin Gateau

10 Floz egg white
10 oz Caster sugar
3 tb Cocoa
15 Floz cream
2 oz Chocolate
1 tb Instant coffee
2 tb Water
Bakewell paper
Icing sugar to dredge
Whisk the whites until firm but not dry. Whisk in 3tbsp caster sugar. Whisk
until stiff and shiny. Fold in the remaining caster sugar and sifted cocoa.
Pipe 8x8 inch strips and 3x8 inch rounds. Cook in a low oven until well
dried. Leave to cool.
Mix the cream, melted chocolate, coffee and water together to make mocha
cream. Sandwich the meringue rounds together using mocha cream . Mask with
cream.
Break up the meringue strips into 1-2 inch pieces. Stick haphazardly over
the gateaux. Dredge in strips with the icing sugar.
