Waffles - Country Cooking

Yield: 4 servings

Ingredients and directions for this recipe

3 lg Eggs 1 T Baking powder
1 1/4 c Milk 1/2 t Salt
1/2 c Vegetable oil Confectioners' sugar
1 3/4 c Unsifted all-purpose flour Berries (opt.)
2 T Granulated sugar Mystery Syrup, opt.

1. Separate eggs, placing yolks in a medium-size bowl and whites in a
small bowl. With electric mixer on high speed, beat yolks until light
yellow and thick. Reduce mixer speed to medium. Beat in milk and oil
until combined.

2. Add flour, sugar, baking powder, and salt to milk mixture and beat
until smooth batter forms.

3. Wash and dry beaters. With mixer on high speed, beat egg whites
until soft peaks form; gently fold into batter.

4. Spoon batter onto preheated waffle iron which has been coated with
non-stick vegetable cooking spray. Bake until waffle is golden brown
on both sides. Remove to individual plate and dust with
confectioners' sugar. Serve with berries and syrup, if desired.

Makes 12 5 by 3 1/2-inch waffles
